Chicken Kabobs with Peanut Sauce

This unique flavor combo will become a beloved family classic.
Ingredients:
  • 2 large whole bone-in chicken breasts (2 lb)
  • 1/4 cup soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon packed brown sugar
  • 1/4 teaspoon ground ginger
  • 1 clove garlic, crushed
  • 1 small onion, finely chopped (1/4 cup)
  • 1/3 cup peanut butter
  • 1/3 cup water
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground coriander
  • 3 to 4 drops red pepper sauce
Instructions:
  • Prepare the chicken by removing the skin and bones. Cut the chicken into 3/4-inch pieces. For easier cutting, partially freeze the chicken for about 1 hour. In a large glass bowl, combine the chicken with the rest of the kabob ingredients. Cover and refrigerate for at least 2 hours, stirring occasionally.
  • Before grilling, immerse a total of 14 to 16 bamboo skewers in water for at least 30 minutes to avoid charring.
  • In a small saucepan, warm oil over medium heat. Sauté onion until tender, then remove from heat. Add remaining sauce ingredients and gently heat on low, stirring occasionally, until well combined (avoid overcooking to prevent separation).
  • Preheat your oven to broil. Take the chicken out of the marinade, keeping the marinade for later. Skewer 4 or 5 pieces of chicken on each skewer. Brush the chicken with the reserved marinade.
  • Broil chicken close to heat for 4-5 minutes until golden. Flip, brush with marinade, and broil another 4-5 minutes until fully cooked. Serve hot with sauce.
