A refreshing and vibrant dish perfect for beach days or holiday getaways.
Ingredients:
  • 2 slices day-old wholemeal bread, crusts removed, torn
  • 125ml milk
  • 450g chicken mince or turkey breast mince
  • 1/4 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 40.00 ml flat-leaf parsley leaves, finely chopped, plus whole leaves to serve
  • 1 tsp grated lemon zest
  • 2.50 gm ground cumin
  • 250.00 ml nicoise or kalamata olives, pitted
  • 250g green beans, sliced lengthways, blanched
  • 4 butter lettuce leaves
  • 1 tomato, sliced
  • 2 soft-boiled eggs, peeled, halved
  • 4 anchovy fillets, drained
Instructions:
  • Preheat the oven to 180°C. Soak bread in milk for 5 minutes, then drain and gently squeeze out excess liquid. Combine bread with mince, onion, garlic, parsley, zest, cumin, and roughly chopped olives. Season, mix with damp hands, shape into 4 thick burger patties, and chill for 30 minutes.
  • Heat an ovenproof frypan over medium-high heat. Brush the patties with oil and cook each side for 2 minutes until nicely browned. Finish by baking for 8-10 minutes until fully cooked.
  • Assemble beans, lettuce, tomato, patties, egg, anchovies, parsley, and remaining olives on plates. Season to taste and enjoy.
