Chicken Nugget Taco Salads

Kid-friendly taco salad with crispy chicken nuggets - a family favorite for getting those greens in!
Ingredients:
  • 1 box (12 oz) frozen breaded chicken nuggets
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1/2 cup sour cream
  • 1 bag (9 oz) romaine lettuce with carrots
  • 1 1/4 cups shredded Cheddar cheese (5 oz)
  • 1 can (11 oz) southwestern style whole kernel corn with onions, black beans and red bell peppers
  • 2 large plum (Roma) tomatoes, coarsely chopped (1 1/3 cups)
Instructions:
  • Follow the instructions on the package to bake the chicken nuggets. Next, pour 1/2 cup of enchilada sauce into a large custard cup. Dip each nugget into the sauce, ensuring to shake off any extra sauce. Return the coated nuggets to the pan and bake for an additional 2 to 3 minutes until heated through.
  • Combine the leftover enchilada sauce and sour cream in a small bowl using a whisk; set aside for later.
  • Arrange an equal amount of lettuce on each of the 5 dinner plates. Sprinkle with cheese, corn, and tomatoes. Add chicken nuggets on top. Finish by drizzling with dressing.
