Elevate kids' favorite chicken nuggets by putting them in a taco for a dinner delight!
Ingredients:
  • 700g frozen chicken nuggets
  • Vegetable oil, to shallow- fry, plus 1 1/2 tbsp, extra
  • 450g frozen corn kernels
  • 10.00 gm reduced-salt spice mix for burritos
  • 4 qukes (baby cucumbers), thinly sliced
  • 1 1/2 limes, rind finely grated, plus extra lime wedges, to serve
  • 82.50 ml finely chopped fresh coriander (see tip), plus extra sprigs, to serve
  • 2 avocados, mashed
  • 12 small white tortillas, warmed
  • 260g (1 cup) Greek-style yoghurt
Instructions:
  • For quick cooking, arrange nuggets in a single layer on a microwave-safe plate and heat on High for 3 minutes or until thawed. Next, pour oil into a large frying pan to reach 1cm up the side and heat on high. Cook nuggets in batches for 1-2 minutes per side until golden and heated through. Finally, transfer the cooked nuggets to a paper towel-lined tray to drain.
  • Heat 1 tablespoon of extra oil in a hot frying pan. Add corn and garlic, stirring occasionally for 4 minutes until hot. Mix in half of the spice mix, then remove from heat. Stir in the quke, lime rind, and coriander. Season to taste.
  • Transfer the nuggets to a large bowl and set aside a pinch of the remaining spice mix. Add the rest of the spice mix to the nuggets and toss gently. Spread avocado on tortillas, then add the nuggets, corn mixture, and extra coriander on top. Finally, add the reserved spice mix to the yogurt along with the remaining extra oil. Serve with tacos and extra lime.
