Chicken parmigiana burger

Upgrade your chicken parmi by turning it into a delicious burger!
Ingredients:
  • 140g (2 cups) fresh breadcrumbs (made 
from day-old bread)
  • 40.00 ml chopped fresh basil leaves
  • 50g (1/3 cup) plain flour
  • 2 (about 500g) chicken breast fillets, 
sliced horizontally
  • 36.40 gm extra virgin olive oil
  • 160ml (2/3 cup) napoletana pasta sauce
  • 120g kasseri cheese, sliced
  • Kewpie Mayonnaise, to serve
  • 4 damper rolls, split, toasted
  • Baby rocket leaves, to serve
  • Fresh basil, extra, to serve
  • Chips, to serve (optional)
Instructions:
  • Mix the breadcrumbs and basil on a large plate, whisk the eggs in a bowl, and place the flour on a separate large plate. Season generously.
  • Coat chicken in flour, shaking off excess. Then dip in egg and coat with breadcrumbs. Transfer to tray. Repeat with remaining chicken. Chill in fridge for 15 minutes to firm.
  • In a large frying pan over medium-high heat, sear the schnitzels in 2 batches for 2 minutes on each side until golden brown. Then, transfer them to a baking tray.
  • Preheat the grill until it's nice and hot. Drizzle the delicious sauce over the chicken and layer on the cheesy slices. Grill for about 3 minutes, or until the cheese turns a beautiful golden color.
  • Spread a generous layer of mayo on the bottom of the damper rolls, then layer with fresh rocket leaves. Cut each chicken parma in half and carefully stack over the rocket. Garnish with fragrant basil leaves and place the top of the bread rolls. Enjoy with a side of chips, if desired.
