Cheesy pan-fried chicken topped with tomato sauce, pepperoni, and mozzarella, baked to perfection. A family favorite!
Ingredients:
  • 8 skinless, boneless chicken breasts
  • 1 cup bread crumbs
  • 0.5 teaspoon garlic salt
  • 6 tablespoons olive oil, divided
  • 2 (14 ounce) cans diced tomatoes
  • 2 teaspoons white sugar
  • 1 teaspoon garlic salt
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 6 ounces sliced pepperoni
  • 3 cups shredded mozzarella cheese
Instructions:
  • Heat your oven to 325 degrees F (165 degrees C).
  • Place chicken breasts between plastic or waxed paper on a flat surface and pound with a meat mallet until 1/2-inch thick.
  • In a shallow bowl, mix together bread crumbs, 1 teaspoon oregano, 1/2 teaspoon garlic salt, salt, and black pepper. Coat both sides of chicken evenly with the bread crumb mixture.
  • In a large skillet over medium heat, sizzle 1 1/2 tablespoons of olive oil. Sear 2 chicken breasts until golden and cooked through, around 4 minutes per side. Repeat with the rest of the oil and chicken. Place the chicken in a 9x13-inch baking dish.
  • In a saucepan, mix together tomatoes, sugar, garlic salt, basil, oregano, salt, and black pepper. Simmer over medium-low heat for 10 to 15 minutes until warm. Pour the flavorful sauce over the chicken breasts in the baking dish.
  • Layer pepperoni and mozzarella cheese on top of the tomato sauce.
  • Simply bake until the cheese is beautifully melted in the preheated oven for 20 to 30 minutes.
