Elevate chicken breasts with a simple yet delicious stuffing of mozzarella cheese and pepperoni.
Ingredients:
  • 4 boneless skinless chicken breasts
  • 2 oz sliced pepperoni
  • 1/2 cup shredded mozzarella cheese (about 2 oz)
  • 1 tablespoon olive oil
  • 4 cups water
  • 1 package (7 oz) uncooked elbow macaroni
  • 1 jar (1 lb 8 oz) tomato pasta sauce (any variety)
  • Chopped fresh basil, if desired
Instructions:
  • Lay chicken breasts flat and carefully slice open a pocket in each one, making sure to keep three sides intact. Fill each breast with pepperoni and mozzarella, then seal the edges firmly.
  • In a nonstick skillet, heat oil over medium-high heat. Cook the chicken for about 9 minutes, turning occasionally, until it is well browned on both sides. (The chicken pockets will open slightly during cooking.) Remove the chicken from the skillet and set it aside.
  • In the same skillet, pour water gently to prevent splattering. Turn up the heat to high until the water boils. Add macaroni and cook for about 3 minutes until nearly tender. Keep the water. Mix in the pasta sauce and bring to a boil. Put the chicken back into the skillet. Lower the heat to medium. Cover and let it simmer for 8 to 10 minutes, or until the chicken's thickest part reaches 170°F when cut (clear juices). Sprinkle with basil before serving.
