Cheesy chicken Philly sandwich: Thinly sliced seasoned chicken with veggies and gooey cheese on a toasted bun.
Ingredients:
  • 2 (4 ounce) skinless, boneless chicken breasts, partially frozen
  • 1.5 tablespoons Cajun seasoning
  • 3 tablespoons clarified butter
  • 0.5 medium onion, sliced
  • 0.5 medium green bell pepper, sliced
  • 1 cup sliced white mushrooms
  • 1.5 cups shredded pepper Jack cheese
  • 0.5 cup chopped banana peppers
  • 2 tablespoons mayonnaise, or to taste
  • 2 (6 inch) submarine rolls, split
Instructions:
  • Slice the chicken breasts thinly, like deli meat, using a meat slicer or a sharp knife. Coat them with Cajun seasoning and allow them to rest for 1 to 2 hours to absorb the flavors and thaw.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and line a baking sheet with foil for easy cleanup.
  • In a skillet over medium heat, melt clarified butter. Saute onion and green pepper for 2 to 3 minutes. Add chicken and mushrooms, and break apart the chicken with a fork or spatula for a shredded/pulled texture. Cook until chicken is almost done, about 8 minutes.
  • Combine Pepper Jack cheese and banana peppers, stirring until the cheese is perfectly melted and gooey.
  • Coat the rolls with a creamy layer of mayonnaise, then generously fill them with the flavorful meat-cheese mixture before placing them on the baking sheet.
  • Bake until cheese is golden and rolls are crispy, approximately 3 minutes in a preheated oven. Serve hot.
