Try this trendy chicken salad in croissant sandwiches made quick and easy in the microwave.
Ingredients:
  • 2 boneless skinless chicken breast halves (1/2 pound)
  • 1/4 cup creamy ranch dressing
  • 1/2 teaspoon yellow mustard
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped tomato
  • 2 tablespoons chopped cashews
  • 2 croissants, split
  • 1 tablespoon butter, margarine, mayonnaise or salad dressing
  • Lettuce, if desired
Instructions:
  • Place the chicken in a 2-cup microwavable casserole or on a microwavable plate, ensuring the thickest parts are towards the outside edge. Cover tightly and microwave on High for 3 to 4 minutes, or until the juices run clear when cutting the thickest pieces. Remove cover and refrigerate for about 10 minutes until cool enough to handle.
  • Dice chicken into bite-size 1/4-inch pieces. Combine chicken, dressing, mustard, cucumber, tomato, and cashews in a bowl. Chill covered in the refrigerator for about 1 hour until cold.
  • Butter the cut sides of the croissant halves. Spread the chicken mixture on the bottom halves, top with lettuce, and cover with the croissant tops before serving.
