No-Mayo Chicken Salad Sandwiches

Delicious no-mayo chicken salad, ideal for sandwiches or croissant sliders. Quick and easy with rotisserie chicken.
Ingredients:
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot honey (such as Mike's Hot Honey®)
  • salt and freshly ground black pepper to taste
  • Chicken Salad:
  • 2 cups cooked, shredded chicken
  • 2 (1/4 inch thick) slices lightly toasted French bread, cut into very small cubes
  • 2 small tomatoes on the vine, diced
  • 1 small onion, thinly sliced
  • 2 tablespoons minced celery
  • 2 tablespoons chopped cilantro
  • 10 small pimento-stuffed olives, halved
  • 8 mini croissants
Instructions:
  • Combine olive oil, red wine vinegar, Dijon mustard, hot honey, salt, and pepper in a bowl, whisk until fully mixed, and set aside.
  • Combine chicken, bread cubes, tomatoes, onion, celery, cilantro, and olives in a large bowl. Pour dressing over the mixture and toss until evenly coated. Adjust seasonings to taste.
  • Split the croissants, stuff them with chicken salad, and present them beautifully.
