Indulge guilt-free in delicious, nutritious sausage rolls.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, finely chopped
  • 80g bread
  • 500g chicken tenderloins, chopped
  • 62.50 ml chopped fresh continental parsley
  • 80.00 ml chopped fresh chives
  • 1 (about 120g) zucchini, finely grated
  • 42.00 gm lemon juice
  • 1 tsp finely grated lemon rind
  • 3 sheets frozen reduced-fat puff pastry, partially thawed, halved
  • 1 egg, lightly whisked
  • 12.00 gm sesame seeds
  • 200g reduced-fat natural yoghurt
  • 40.00 ml chopped fresh continental parsley
  • 40.00 ml chopped fresh mint
  • 1 garlic clove, peeled
Instructions:
  • Combine all dipping sauce ingredients in a food processor and process until smooth.
  • In a frying pan over low heat, gently heat oil. Add onion and garlic, cover, and stir occasionally for 10 minutes until soft. Set aside to cool.
  • Turn the bread into crumbs and place them in a bowl. Mince the chicken until it reaches a consistent texture. Combine the minced chicken, onion mix, herbs, zucchini, lemon juice and rind with the breadcrumbs. Season and mix well to combine.
  • Preheat your oven to 220°C/200°C fan forced. Divide the chicken mixture into 6 equal parts and place each portion along the center of a pastry piece. Brush the edges of the pastry with water, then fold it over the filling and press to seal. Flip each pastry over so the seam is on the bottom. Brush with egg wash and sprinkle sesame seeds on top. Cut each pastry into 6 pieces, place them on lined trays, and bake for 25 minutes or until cooked. Serve with the delicious dipping sauce.
