Chicken Tenders with Dipping Sauce

Crispy chicken with Italian-style bread crumbs and savory sauce - a spooky and delicious Halloween dinner option.
Ingredients:
  • 1 cup buttermilk
  • 2 1/2 teaspoons garlic powder
  • 2 lb uncooked chicken breast tenders (not breaded)
  • 1 cup Gold Medal™ all-purpose flour
  • 1 1/4 teaspoons salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 1/4 cups Progresso™ Italian style bread crumbs
  • Oil for deep frying
  • 1/2 cup mayonnaise
  • 1/4 cup hot-style ketchup
  • 1/4 teaspoon lemon-pepper seasoning
  • 1/4 teaspoon Worcestershire sauce
Instructions:
  • Combine buttermilk, garlic powder, and egg in a 13x9-inch (3-quart) glass baking dish. Add chicken and toss to coat. Cover and refrigerate for 2 to 4 hours.
  • Combine flour, salt, baking powder, and red pepper in a glass pie plate. In a separate pie plate, spread out bread crumbs. Take chicken pieces out of the buttermilk, coat them with the flour mixture, dip them in buttermilk once more, and then coat them thoroughly with bread crumbs.
  • Heat oil in a deep fryer or 3-quart heavy saucepan to 350°F. Fry chicken until browned, about 3 to 5 minutes. Drain on paper towels.
  • In a small bowl, combine mayonnaise, ketchup, lemon-pepper seasoning, and Worcestershire sauce. Drizzle over chicken before serving.
