Indian-spiced chicken burger with a twist.
Ingredients:
  • 500g shoestring fries (McCain Superfries brand)
  • 3 tsp ground coriander
  • 1 x 250g pkt naan bread (Patak's brand), halved
  • 600g chicken mince
  • 56.00 gm tikka masala curry paste (Patak's brand)
  • 1 egg, lightly whisked
  • 70g (1 cup) fresh breadcrumbs (made from 1/2 day-old baguette)
  • 36.80 gm vegetable oil
  • 1 mango, peeled, flesh chopped
  • 82.50 ml loosely packed fresh coriander leaves
  • 1 small red chilli, finely chopped
Instructions:
  • Preheat your oven to a toasty 230°C. Spread the fries out on a spacious baking tray and add a lovely sprinkle of coriander. Bake for 20 minutes, remembering to give them a flip halfway through.
  • Place the naan on a small baking tray and lightly sprinkle with water. Bake for 3-4 minutes until warm and slightly crispy. Remove from the oven and cover with foil to keep it warm.
  • Combine chicken, masala, egg, and breadcrumbs in a bowl, shaping into four 12cm patties. Heat oil in a non-stick frying pan over medium-high heat, then cook patties for 5-6 minutes per side until golden brown and cooked through.
  • In a bowl, mix together mango, half of the coriander, and chilli. Serve by placing naan on plates, layering with chicken and mango mixture. Garnish with remaining coriander leaves and enjoy with fries.
