Elevate your chicken burgers with flavorful curry paste and a generous helping of tangy tomato kasundi.
Ingredients:
  • 2 chicken breast fillets
  • 140g yoghurt
  • 56.00 gm tikka masala curry paste
  • Olive oil, to brush
  • Turkish bread or 4 soft burger buns, split 4 butter lettuce leaves
  • Tomato kasundi, (see note) to serve
  • 125.00 ml coriander leaves
  • 1/2 small red onion, thinly sliced
Instructions:
  • Heat up a chargrill or barbecue over medium-high heat.
  • Cut each chicken fillet in half horizontally, creating 4 portions. Mix yoghurt with tikka paste and brush the mixture over the chicken. Season to taste.
  • Oil the chargrill lightly before grilling the chicken for 2 minutes on each side or until fully cooked. Rest the chicken, covering loosely with foil.
  • Lightly toast the bread, then arrange lettuce on 4 slices and top each with a piece of chicken. Drizzle with tomato kasundi and yogurt, then sprinkle with coriander and onion. Top with remaining bread slices to make sandwiches and serve.
