Chicken with citrus couscous

Citrus-infused chicken and couscous, a delicious delight.
Ingredients:
  • 36.40 gm olive oil
  • 20.00 ml thyme, chopped
  • 1 1/5 kg chicken drumsticks
  • 250.00 ml couscous
  • 250.00 ml frozen peas, blanched
  • 62.50 ml parsley, chopped
  • 2 lemons, juiced
  • 2 oranges, juiced
  • 1 green onion (shallot), finely chopped
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200C or 180C fan-forced. In a large baking dish, whisk together oil, half of the combined juices, and thyme. Season generously with salt and pepper. Add the chicken and mix well to coat evenly.
  • Roast the chicken for 45 minutes, ensuring it is golden brown and fully cooked, flipping it halfway through.
  • For citrus couscous, combine reserved citrus juice with water in a measuring jug to total 1 cup. Boil the liquid in a small saucepan. Place couscous in a bowl, pour in the hot liquid, cover, and let sit for 5 minutes. Fluff the couscous with a fork, then add peas, green onions, parsley, salt, and pepper. Toss to combine everything.
  • Plate the chicken alongside citrus-infused couscous and garnish with fresh lemon wedges.
