Impress guests with this quick and easy chicken gnocchi in a flavorful tomato-balsamic sauce.
Ingredients:
  • 4 slices bacon
  • 1 onion, diced
  • 1 tablespoon olive oil
  • 2 skinless, boneless chicken breast halves
  • 1 lemon, juiced, divided
  • 0.25 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 2 sprigs finely chopped rosemary
  • 1 teaspoon red pepper flakes
  • 0.5 (14.5 ounce) can whole peeled tomatoes
  • 3 tablespoons butter
  • 2 cups gnocchi
  • 0.5 (8 ounce) package fresh spinach
Instructions:
  • In a large skillet over medium-high heat, cook bacon and onion together, turning occasionally, until beautifully browned and crispy, approximately 10 minutes. Remove from skillet and set aside.
  • In a pan over medium heat, warm oil. Add chicken along with half of the lemon juice, cook for 5 to 7 minutes on each side until no longer pink in the center and juices run clear.
  • In a saucepan, combine balsamic vinegar, brown sugar, rosemary, red pepper flakes, and remaining lemon juice. Bring to a boil, then simmer for 5 to 7 minutes until bubbling. Stir in tomatoes with their juice and continue simmering while the chicken cooks.
  • In a pan set over medium heat, melt butter. Pan-fry gnocchi in the melted butter until they turn golden brown, about 5 to 7 minutes.
  • Fill a saucepan with water and bring to a boil with a steamer insert in place just below the water level. Steam spinach covered until tender, about 2 to 6 minutes.
  • Layer crispy bacon and fragrant onion on a serving plate. Add a generous heap of fresh spinach, pillowy gnocchi, and succulent chicken, in that precise order. Finish by elegantly drizzling the ensemble with a rich tomato-balsamic sauce.
