Quick and delicious sweet and sticky chicken ready in less than an hour.
Ingredients:
  • cooking spray
  • 1 (2.5 pound) whole chicken, cut into pieces
  • salt and ground black pepper to taste
  • 0.66666668653488 cup plum jam
  • 1.5 teaspoons ground black pepper
  • 1.5 teaspoons minced fresh ginger root
  • 1.25 teaspoons prepared horseradish
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly coat a baking sheet with cooking spray.
  • Season the chicken pieces generously with salt and pepper, then place them skin-side-up on the prepared baking sheet.
  • Let it bake in the hot oven for 20 minutes.
  • In a small bowl, combine plum jam, 1 1/2 teaspoons pepper, ginger, and horseradish, stirring until well mixed.
  • After 20 minutes of baking the chicken, generously brush it with the luscious plum glaze, then bake it further until fully cooked and the juices run clear, about 20-30 minutes. Ensure it reaches an internal temperature of 165°F (74°C) using an instant-read thermometer near the bone.
