Chicken-Bacon-Ranch Enchiladas

Delicious bacon-ranch chicken enchiladas, a surefire weeknight favorite.
Ingredients:
  • 6 slices bacon, chopped into 1/2-inch pieces
  • 5 cups shredded cooked chicken
  • 1 can (10 oz) Old El Paso™ Mild Green Chile Enchilada Sauce
  • 2 cups shredded Mexican cheese blend (8 oz)
  • 1 tablespoon ranch dressing & seasoning mix
  • 12 flour or corn tortillas (6 inch)
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 2 tablespoons all-purpose flour
  • 2 tablespoons ranch dressing & seasoning mix
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 cup sour cream
  • Cilantro, onions, tomatoes, avocado, olives, shredded lettuce
Instructions:
  • Preheat oven to 375°F.
  • Cook chopped bacon in a deep 10-inch skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate and discard the drippings.
  • Combine half of the crispy bacon with the chicken, enchilada sauce, 1 cup of cheese, and 1 tablespoon of ranch dressing & seasoning mix in a large bowl.
  • In the same skillet, heat vegetable oil until hot. Sauté onion with a pinch of salt until soft and translucent, about 5 minutes. Add chiles and cook until any liquid has mostly evaporated. Stir in flour ensuring no dry lumps remain. Cook for 1 minute then mix in 2 tablespoons of ranch dressing & seasoning.
  • Gradually whisk in chicken broth and simmer for about 8 minutes until slightly thickened. Stir in sour cream and simmer for 1 to 2 minutes. Spread a thin layer of the sauce in an ungreased 13x9-inch (3-quart) glass baking dish to coat the bottom.
  • Roll up tortillas with flavorful chicken filling, creating enchiladas. Place enchiladas in a baking dish in two rows of six. Top with the remaining sauce, cheese, and crispy bacon.
  • Bake for approximately 30 minutes until the edges of the enchiladas start to brown and the sauce is bubbling. Allow it to rest for 10 minutes before serving with your favorite toppings.
