Chill with 36 crispy canapés ready in just 20 minutes for your party!
Ingredients:
  • 1 1/2 cups finely chopped cooked chicken
  • 1/4 cup finely chopped unpeeled red apple
  • 1/4 cup chopped peanuts
  • 1/2 cup mango chutney, chopped
  • 3 medium English (seedless) cucumbers
Instructions:
  • Combine all ingredients in a medium bowl, excluding the cucumbers.
  • Trim ends off cucumbers, then use a fork to score the peel lengthwise before slicing into 3/4-inch-thick rounds.
  • Using a small melon baller, hollow out the center of each slice without piercing the bottom. Fill each slice with 1 tablespoon of chicken mixture.
