Sweet chili marinated grilled chicken skewers are a crowd-pleasing appetizer bursting with flavor.
Ingredients:
  • 14 bamboo skewers (6 inch)
  • 1 1/2 lb boneless skinless chicken thighs
  • 1 bottle (12 oz) sweet chili sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic chili sauce
  • 2 teaspoons Sriracha sauce
  • 1/4 cup chopped fresh cilantro
  • Fresh cilantro leaves, if desired
Instructions:
  • Begin by soaking the bamboo skewers in water for 30 minutes. While they soak, cut the chicken into 14 (1/2-inch) strips. In a resealable food-storage plastic bag, combine 1/4 cup of the sweet chili sauce with the remaining ingredients except garnish. Place the chicken in the bag, seal it, and ensure the chicken is coated with the marinade by turning it. Refrigerate for 30 minutes.
  • Preheat gas or charcoal grill. Take chicken out of marinade and discard marinade. Skewer chicken. Grill over high heat, turning once, until cooked through, about 10 minutes.
  • Drizzle with the remaining sweet chili sauce and top with fresh cilantro for an added burst of flavor.
