Smoky, spicy chorizo chili with a hint of sweetness, perfect for a crowd.
Ingredients:
  • 1 pound hickory-smoked bacon, chopped
  • 2 pounds chorizo sausage, chopped
  • 3 pounds ground sirloin
  • 2 (29 ounce) cans tomato sauce
  • 2 (28 ounce) cans peeled and diced tomatoes
  • 2 medium onions, diced
  • 1 tablespoon Italian seasoning
  • 0.5 cup chili powder
  • 2 tablespoons ground cumin
  • 1.5 tablespoons brown sugar
  • 1 tablespoon liquid smoke flavoring
  • 3 teaspoons garlic juice
  • 2 teaspoons ground cinnamon
  • 4 jalapeno peppers, seeded and chopped
  • 4 (15.25 ounce) cans kidney beans, undrained
  • 2 (15.25 ounce) cans black beans, undrained
  • 3 ounces unsweetened chocolate, chopped
Instructions:
  • In a large stockpot over medium-high heat, cook the bacon until slightly crisp, about 5 minutes. Remove and set aside.
  • Lower the heat to medium and introduce the chorizo into the pan. Sauté and stir until it develops a light brown color, approximately 5 minutes. Remove from the pan and set it aside after draining the excess oil.
  • Brown the ground sirloin in a pot over medium-high heat until no longer pink, about 5 to 7 minutes, stirring constantly. Drain the grease, then add bacon, chorizo, tomato sauce, tomatoes, onions, Italian seasoning, chili powder, cumin, brown sugar, liquid smoke, garlic juice, and cinnamon. Stir well to combine.
  • Bring the mixture to a lively boil, then lower the heat to a gentle simmer. Introduce jalapenos, kidney beans, black beans, and chocolate. Allow the flavors to mingle beautifully while simmering for approximately 2 hours, stirring occasionally. Serve and enjoy!
