Chilled Cantaloupe Soup

Refreshing chilled cantaloupe soup infused with citrus and cinnamon, garnished with fresh mint.
Ingredients:
  • 1 cantaloupe - peeled, seeded and cubed
  • 2 cups orange juice
  • 1 tablespoon fresh lime juice
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Prepare the cantaloupe by removing the skin, seeds, and cutting into cubes.
  • In a blender or food processor, blend cantaloupe with 1/2 cup orange juice until smooth. Transfer to a large bowl and mix in lime juice, cinnamon, and the rest of the orange juice. Refrigerate for at least one hour. Sprinkle with mint for a refreshing touch, if desired.
