Chilli pork and peanut stir-fry with beans

Pork symbolizes prosperity and is a must-have during Chinese New Year celebrations for its delicious taste.
Ingredients:
  • 30.00 ml Chinese rice wine or dry sherry
  • 1 tsp sesame oil
  • 2 tsp chilli flakes
  • 42.00 gm light soy sauce
  • 600g pork fillet, thinly sliced
  • 36.40 gm peanut oil
  • 2.50 gm cornflour
  • 80ml (1/3 cup) chicken style liquid stock
  • 300g green beans, topped, cut in half diagonally
  • 3 garlic cloves, finely grated
  • 1/2 tsp Chinese five spice
  • 100g unsalted dry-roasted peanuts, coarsely chopped
Instructions:
  • In a medium glass or ceramic bowl, mix together the Chinese rice wine or dry sherry, sesame oil, chili flakes, and half of the soy sauce.
  • Combine the pork with the soy sauce mixture, ensuring it is evenly coated. Marinate in the fridge for 2 hours, covered with plastic wrap.
  • Pat the pork dry, saving the flavorful marinade. Heat 2 teaspoons of oil in a sizzling wok. Cook one-third of the pork until golden, about 1-2 minutes. Set aside on a plate. Repeat twice more with the remaining oil and pork, ensuring the wok is reheated between batches.
  • In a bowl, mix cornflour with 1 tablespoon of stock. Heat oil in a wok. Stir-fry beans, garlic, and Chinese five spice for 1 minute. Add sugar, soy sauce, stock, and marinade. Cook until beans are vibrant green and tender crisp. Stir in cornflour mixture and simmer. Toss in pork and three-quarters of peanuts. Transfer to a serving dish, sprinkle with remaining peanuts, and serve.
