Chinese Sweet Bun Dough

Fill sweet buns with Chinese BBQ pork, bean paste, or favorite filling, bake until golden brown.
Ingredients:
  • 0.5 cup white sugar
  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 1 tablespoon active dry yeast
  • 4 cups bread flour
  • 2 eggs, beaten (divided)
  • 6 tablespoons vegetable oil
  • 2 teaspoons salt
  • 2 teaspoons water
  • 1 teaspoon sesame seeds for garnish (divided)
Instructions:
  • In a large mixing bowl, combine milk and sugar, whisking until sugar is fully dissolved. Add yeast, allowing it to sit until a frothy layer forms on the milk, approximately 10 minutes. Mix in flour, most of the beaten eggs (set aside a tablespoon in a small bowl), vegetable oil, and salt, stirring thoroughly until fully combined.
  • Transfer the dough to a generously floured surface and knead for 10 minutes until it becomes smooth and elastic, with a slight stickiness. Place the dough in a large oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm spot until it doubles in size, which should take 2 to 3 hours.
  • Prepare a baking sheet by covering it with parchment paper.
  • Take the dough out of the bowl and gently knead for about one minute to deflate. Shape the dough into a rope, then divide it into 12 equal pieces. Roll each piece into a ball and flatten into a 5 to 6-inch disk using your fingers.
  • Take 2 tablespoons of your preferred bun filling and center it on the dough circle. Fold the edges of the dough over the filling, then pinch and twist the top to seal it completely. Ensure there are no openings. Arrange the filled bun with the sealed side facing down on parchment paper. Proceed with making all the buns in the same way. Cover the filled buns with plastic wrap and allow them to rise for 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Combine reserved beaten egg with water and brush the top of each bun with the egg wash. Sprinkle a few sesame seeds on top for extra flavor and crunch.
  • Bake buns in the preheated oven for 20 to 30 minutes, rotating the baking sheet halfway through, until golden brown and glossy on top. Serve while warm.
