Ingredients:
  • 500g pork fillet, trimmed, thinly sliced
  • 21.00 gm reduced-salt soy sauce
  • 20.00 ml shao hsing Chinese cooking wine (see note) or sweet sherry
  • 250g packet dried rice stick (pad Thai) noodles
  • 36.40 gm peanut oil
  • 2 small red onions, halved, cut into wedges
  • 1/2 small pineapple, peeled, cored, roughly chopped
  • 1 red capsicum, roughly chopped
  • 175g sachet sweet & sour chicken stir-fry recipe base
Instructions:
  • Marinate pork in a flavorful mixture of soy sauce and wine or sherry in a shallow glass or ceramic dish, letting it sit for 10 minutes.
  • Place noodles in a large heatproof bowl and cover with boiling water. Let them stand for 8 to 10 minutes until softened. Use a fork to separate the noodles, then drain and rinse under cold water. Set aside.
  • In a wok set over high heat, heat 1 tablespoon of oil until shimmering. Add half of the pork and stir-fry for 1 to 2 minutes until nicely browned. Transfer the pork to a bowl and repeat the process with the remaining pork.
  • Heat the oil in a wok, then stir-fry the onions for 1 minute. Add pineapple and capsicum and stir-fry for 2-3 minutes until capsicum is tender. Place the pork back in the wok, along with stir-fry sauce and noodles. Stir-fry for 2 minutes until warmed through. Serve in bowls and enjoy!
