Ingredients:
  • 300g (1 1/2 cups) long-grain white rice
  • 560g pkt Simply Thin Pork BBQ Sausages
  • 1 green capsicum, deseeded, cut into 2cm pieces
  • 2 celery stalks, trimmed, thickly sliced diagonally
  • 500g jar Sweet & Sour Simmer Sauce
  • 227g can pineapple pieces in juice, drained
  • 1 large green shallot, thinly sliced diagonally
Instructions:
  • Prepare fluffy and perfectly cooked rice by using the absorption method as directed on the package.
  • Heat oil in a large, deep frying pan over medium-high heat. Brown the sausages for 5-6 minutes, flipping occasionally. Remove from heat, transfer to a cutting board, and slice diagonally.
  • Sauté the capsicum and celery in a pan over medium-high heat until the capsicum starts to brown, about 5 minutes. Add simmer sauce, pineapple, and 85ml (¾ cup) water. Mix well. Add the sausage and coat it with the sauce. Bring to a boil, then reduce heat to low and simmer for 10 minutes, stirring occasionally, until the sausage is cooked through and the sauce has thickened. Serve with rice and garnish with shallot.
