Spicy-sweet Chinese appetizers for your next dinner, with a kick from crushed red pepper flakes.
Ingredients:
  • 1/2 lb lean ground pork
  • 1/2 cup chopped green onions (8 medium)
  • 1 tablespoon grated gingerroot
  • 24 wonton skins (about 3 1/4-inch square)
  • 3 tablespoons vegetable oil
  • 2 tablespoons sugar
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons water
  • 1/2 teaspoon sesame oil
  • 1/8 to 1/4 teaspoon crushed red pepper flakes
Instructions:
  • Cover a cookie sheet with parchment paper. Combine pork, onions, and ginger in a small bowl.
  • Take one wonton skin and place a generous teaspoon of pork mixture in the center. Moisten the edges of the skin with water, fold it in half to make a triangle, and seal the sides. Join the two ends to create a "hat" shape. Arrange the pot stickers on a cookie sheet and cover them with a damp towel to prevent drying out.
  • 1. Bring 3 quarts of water to a boil in a Dutch oven. Add half of the pot stickers and cook for about 5 minutes until the edges of the wonton skins are clear. Using a slotted spoon, transfer the pot stickers to paper towels to drain. Repeat with the remaining pot stickers.
  • In a small bowl, combine sauce ingredients until the sugar is fully dissolved; set aside.
  • In a 12-inch nonstick skillet, warm 2 tablespoons of oil over medium heat. Cook half of the pot stickers for 2 to 3 minutes until golden brown and crisp on the bottom. Flip and cook for another 2 to 3 minutes until browned and crispy. Use a pancake turner to transfer the pot stickers to a serving platter. Repeat with the remaining oil and pot stickers. Serve warm with sauce.
