Indulge guilt-free with this creamy dairy-free chocolate ice cream featuring a luscious no-cook caramel sauce made from sweet dates.
Ingredients:
  • 5 ripe bananas
  • 10.00 gm cocoa powder
  • 125.00 ml unsweetened almond milk
  • Cacao nibs, to serve
  • 7 fresh medjool dates, pitted, roughly chopped
  • 0.60 gm sea salt
  • 2.20 gm vanilla extract
  • 27.00 gm maple syrup
  • 82.50 ml unsweetened almond milk
Instructions:
  • Cover a baking tray with parchment paper. Peel bananas and slice into 4cm pieces. Arrange the pieces in a single layer on the tray. Freeze for at least 4 hours or preferably overnight.
  • Prepare the 'Caramel' Sauce: Combine dates, salt, vanilla, syrup, and milk in a small food processor. Blend until creamy.
  • In a food processor, blend frozen banana, cocoa, and milk until creamy, scraping down the sides as needed.
  • Quickly spoon the mixture into serving dishes, drizzle with sauce, sprinkle with cacao nibs, and serve immediately.
