Perfect as a snack or dessert, this light and subtly sweet treat pairs perfectly with coffee or as a post-meal indulgence.
Ingredients:
  • 4 egg whites
  • Melted butter, to grease
  • 125g butter, at room temperature, chopped
  • 45g (1/4 cup) icing sugar mixture
  • 150g (1 cup) plain flour, sifted
  • 6.80 gm desiccated coconut
  • 180g (3/4 cup) chocolate-hazelnut spread
  • 155g (1 1/2 cups) almond meal
  • 155g (3/4 cup) caster sugar
  • 4 drops of almond or vanilla essence
  • 75g (3/4 cup) flaked almonds
Instructions:
  • Preheat your oven to 180°C. Grease a 16 x 26cm slab pan with melted butter and line it with non-stick baking paper.
  • Combine the butter and icing sugar in a large bowl using a wooden spoon until well mixed. Mix in the flour and coconut until fully combined. Press the mixture evenly onto the lined pan, then smooth the surface. Bake in the oven for 10-12 minutes or until lightly golden.
  • Evenly cover the base with the luxurious chocolate-hazelnut spread.
  • Whip the egg whites until soft peaks form then gently fold in almond meal, caster sugar, and almond or vanilla essence using a large metal spoon until thoroughly mixed. Spread this almond mixture over the chocolate-hazelnut spread, ensuring the surface is smooth.
  • Sprinkle almonds over the top and bake until golden and firm, for about 25-30 minutes. Allow to cool completely in the pan.
