Chocolate and banana loaf

Perfect for brunch or tea time, enjoy this deliciously moist treat.
Ingredients:
  • 225.00 gm self-raising flour
  • 118.80 gm brown sugar
  • 0.63 gm mixed spice
  • 1.25 gm bicarbonate of soda
  • 2 lightly beaten eggs
  • 128.75 gm milk
  • 75.08 gm olive oil
  • 195.00 gm mashed ripe banana
  • 375.00 ml chopped milk chocolate
Instructions:
  • 1. Preheat the oven to 170°C. 2. Grease and line a 10cm x 20cm loaf tin. 3. In a large bowl, sift the flour and then add the brown sugar, mixed spice, and bicarbonate of soda. 4. Create a well in the center of the dry ingredients.
  • In a large bowl, whisk together eggs, milk, and olive oil until fully combined. Gently fold in banana and chocolate.
  • Gently fold the banana mixture into the flour mixture until just combined. Transfer the batter into the loaf tin and bake for 45-50 minutes until golden and cooked. Let it cool for 5 minutes before flipping onto a wire rack. Enjoy warm or at room temperature.
