Decadent brownies, ideal with a steaming cup of tea.
Ingredients:
  • 150g unsalted butter, chopped
  • 100g dark chocolate, chopped
  • 150g milk chocolate
  • 107.50 gm caster sugar
  • 250.00 ml plain flour
  • 2 eggs, lightly beaten
  • 13.60 gm desiccated coconut
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and lightly grease two mini muffin pans with 1 1/2 tablespoon (30ml) capacity each.
  • In a saucepan, combine butter and dark chocolate. Roughly chop two-thirds of the milk chocolate and add it to the saucepan. Cut the remaining milk chocolate into 24 pieces and set aside.
  • In a saucepan over gentle heat, stir for 2 to 3 minutes until velvety. Remove from heat, mix in sugar, and let cool for 5 minutes. Gently fold in flour, eggs, and coconut using a whisk.
  • Divide the mixture evenly among the muffin holes, then press a piece of the reserved milk chocolate into the center of each brownie. Bake for 12 minutes or until the tops are set. Let them rest in the pan for 5 minutes before transferring them to a wire rack to cool. Enjoy your delicious brownies!
