Chocolate brownie by Matt Preston

Decadent dark chocolate brownies - a rich and indulgent treat.
Ingredients:
  • 200g good-quality dark chocolate
  • 120g unsalted butter, chopped
  • 4.40 gm vanilla extract
  • 200g brown sugar
  • 2 eggs
  • 150g plain flour
  • 4.00 gm baking powder
  • 1.20 gm flaked salt
Instructions:
  • Preheat the oven to 170°C for the perfect baking temperature.
  • Gently melt the chocolate, butter, and vanilla extract until smooth. You can do this in the microwave or using a double boiler method. Be cautious of steam if using the double boiler. Remove from heat once smooth. Stir in the sugar until dissolved, then whisk in both eggs.
  • Combine the flour, baking powder, and salt. Gradually sift and fold the dry mixture into the chocolate mix until fully incorporated.
  • Grease a shallow metal pan with butter and line it with a sheet of parchment paper that covers the long sides and bottom, creating a sling to easily lift the baked brownie out of the pan.
  • Pour the batter into the baking pan, sprinkle with a touch of flaked salt, then bake for 25-30 minutes until the brownie rises, develops a shiny and cracked top, and remains slightly sticky and fudgy when tested with a skewer in the center.
  • Continue cooking until the center is no longer wet and sludgy. Allow it to cool before cutting into squares and indulging.
