Indulgent chocolate brownie cookies with peppermint bark pieces. A must-have holiday treat pairing perfectly with hot cocoa by the fire.
Ingredients:
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup white granulated sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • About 1 cup peppermint bark, homemade or store-bought, broken into little chip sized pieces
Instructions:
  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Sift flour, baking soda, baking powder, salt, and cocoa powder together in a bowl. Set aside.
  • Cream together butter and sugars with an electric mixer until light and well mixed, about 2 minutes. Add egg and vanilla extract, mixing for 1 minute. Scrape down the bowl halfway through. Slowly add sifted flour mixture and mix until just incorporated, being careful not to over-mix.
  • Gently incorporate the peppermint bark chips using a stiff spatula.
  • Shape perfect dough balls: Use a small spoon to scoop the dough and roll it gently between your palms to create 1-inch balls. Place them on the baking sheet, leaving a few inches of space between each one.
  • To bake the cookies, place in the oven and bake for 10 to 12 minutes. Allow them to cool on the pan briefly before transferring to a wire rack to cool completely.
