Chocolate Peppermint Bark Cookies

Festive holiday chocolate cookies with peppermint bark, candy canes, and pecans for a delicious twist.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup dark cocoa powder (such as Hershey's® Special Dark)
  • 1 teaspoon baking powder
  • 0.75 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup firmly packed dark brown sugar
  • 0.5 cup white sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon peppermint extract
  • 1 cup chopped chocolate peppermint bark
  • 0.75 cup chopped pecans
  • 0.25 cup crushed candy canes
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare 2 baking sheets with parchment paper.
  • Combine flour, cocoa powder, baking powder, baking soda, and salt in a bowl and whisk until mixed.
  • In a large bowl, cream together butter, brown sugar, and white sugar until light and fluffy using an electric mixer. Add eggs, vanilla, and peppermint extract, mixing until well combined. Gently stir in half of the dry ingredients followed by the remaining dry ingredients. Carefully fold in peppermint bark pieces, pecans, and crushed candy cane pieces.
  • Drop 1 tablespoon-sized dough balls onto baking sheets, spacing them 1 1/2 inches apart.
  • Bake in the preheated oven until the cookie tops start to set, 10 to 15 minutes. Let the cookies cool for 5 minutes on the baking sheets before transferring to a wire rack to cool completely.
