Spicy chili and cayenne kick up chocolate oatmeal chip cookies for a delightful twist on a classic treat.
Ingredients:
  • 0.5 cup unsalted butter, softened
  • 0.5 cup dark brown sugar
  • 0.25 cup white sugar
  • 2 eggs
  • 2 tablespoons ground cinnamon
  • 1 tablespoon chili powder
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon ground cayenne pepper
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 2 cups oats
  • 0.5 cup chocolate chips
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together butter, brown sugar, and white sugar until smooth and creamy. Gradually add eggs one at a time, ensuring each one is well mixed in. Stir in cinnamon, chili powder, vanilla extract, and cayenne pepper.
  • In a medium bowl, combine flour, cocoa powder, salt, and baking soda. Gradually add the flour mixture to the butter mixture, mixing thoroughly each time. Gently stir in oats and chocolate chips. Refrigerate the batter for at least 30 minutes before proceeding.
  • Shape dough into 12 golf ball-sized balls and arrange them on a cookie sheet, spacing them 2 inches apart. Gently press down on each ball to flatten to half its original height.
  • Bake in the preheated oven until edges turn golden, around 8 to 12 minutes. Allow them to cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.
