Indulge the family with simple and delicious frozen chocolate coconut treats - a favorite among kids!
Ingredients:
  • 195.00 gm shredded coconut
  • 300g good-quality milk chocolate, broken into pieces
  • 8 scoops vanilla ice-cream
  • 100g 70%-cocoa dark chocolate, broken into pieces
  • 126.25 gm thickened cream
  • 250g strawberries, hulled, quartered
Instructions:
  • Toast coconut in a large non-stick frying pan over medium-low heat, shaking often, for 5 minutes until golden. Transfer to a plate to prevent burning.
  • 1. Place milk chocolate in a microwave-safe bowl. 2. Microwave on MEDIUM (50%) power for 1 to 2 minutes, stirring every minute until almost melted. 3. Stir until smooth, then mix in the coconut.
  • Prepare a baking tray lined with foil. Arrange egg rings on the tray, then fill each ring with 1/3 cup of chocolate mixture to form nests. Create an indentation in the center of each nest using the back of a spoon. Carefully remove the egg rings and refrigerate the nests for 2 hours until they are set.
  • Line a baking tray with foil and elegantly arrange ice-cream scoops on the tray. Gently cover them with plastic wrap and let them chill in the freezer for 2 hours, until you're ready to indulge.
  • Combine dark chocolate and cream in a microwave-safe bowl. Microwave on MEDIUM-HIGH (70%) for 1 to 2 minutes, stirring every minute with a metal spoon until almost melted. Stir until smooth.
  • Top each chocolate nest with a scoop of ice cream and a generous drizzle of chocolate sauce. Enjoy with fresh strawberries on the side.
