Indulgent slice with caramel, chocolatey rice bubbles, and a smooth chocolate layer.
Ingredients:
  • 50g (1/2 cup) cocoa powder
  • 240g (1 1/2 cups) icing sugar mixture
  • 175g (5 cups) rice bubbles
  • 45g (1/3 cup) roasted salted peanuts, coarsely chopped
  • 150g Copha, melted
  • 2 x 380g NESTLÉ Top n Fill Caramel
  • 190g (2/3 cup) smooth peanut butter
  • 150g milk chocolate, melted
Instructions:
  • Prepare a 20 x 30cm lamington pan by greasing and lining it with baking paper, making sure the paper overhangs on the long sides.
  • In a large bowl, sift together the cocoa powder and icing sugar. Add the rice bubbles and peanuts, mix well. Stir in the copha until combined. Transfer the mixture into the prepared pan and press it evenly using the back of a spoon. Chill in the fridge for 1 hour until firm.
  • In a medium saucepan over medium heat, melt together the caramel filling and peanut butter until the mixture boils and thickens, about 5 minutes. Remove from heat and spread evenly over the prepared base. Chill in the fridge for 2 hours to set.
  • Melt the chocolate in a heatproof bowl over simmering water, stirring with a metal spoon until smooth. Pour the melted chocolate over the caramel mixture, spreading it evenly. Chill in the fridge for 1 hour until firm. Cut into squares and enjoy!
