Indulgent cocoa whipped cream filled chocolate cream puffs - a classic family favorite!
Ingredients:
  • 0.5 cup water
  • 0.25 cup shortening (such as Crisco®)
  • 0.5 cup all-purpose flour
  • 2 teaspoons unsweetened cocoa powder
  • 1 tablespoon white sugar
  • 2 eggs, at room temperature
  • 0.33333334326744 cup granulated sugar
  • 0.33333334326744 cup unsweetened cocoa powder
  • 0.25 cup whipping cream
  • 2 ounces semisweet chocolate chips
Instructions:
  • Preheat the oven to 400°F (200°C) and lightly grease a baking sheet with shortening. Chill beaters in the freezer.
  • In a saucepan over medium-high heat, bring water and shortening to a rolling boil. Add flour, cocoa powder, sugar, and salt all at once, then reduce heat to low. Vigorously stir mixture until it forms a ball and detaches from the pan, about 1 minute. Remove from heat and let cool for 5 minutes.
  • Using chilled beaters, vigorously beat in eggs one at a time until the batter becomes smooth and glossy. Drop the dough onto the baking sheet in 6 mounds.
  • Bake in the preheated oven for 25 to 30 minutes until puffed and dry.
  • After baking, use a knife to create steam vents on the side of each puff. Then, cool on a wire rack for about 20 minutes.
  • In a bowl, blend sugar, cocoa powder, and whipping cream together. Use an electric mixer to whip until stiff peaks form. Chill in the refrigerator until ready to use.
  • Slice the cooled puffs horizontally and then generously fill them with cocoa whipped cream.
  • Prepare the glaze by heating whipping cream in a small pot until hot. Remove from heat and stir in chocolate chips until melted. Let it cool slightly, then drizzle over the cream puffs and refrigerate before serving.
