Decadent puff pastry filled with creamy custard, topped with rich melted chocolate or a sprinkle of powdered sugar.
Ingredients:
  • 0.5 cup white sugar
  • 5 tablespoons all-purpose flour
  • 1 pinch salt
  • 2 cups milk
  • 2 egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 0.5 cup shortening
  • 1 cup water
  • 1 cup all-purpose flour
  • 4 eggs
Instructions:
  • To make the custard, mix 1/2 cup sugar, 5 tablespoons flour, and a pinch of salt in a small saucepan. Gradually whisk in milk until smooth. Bring to a gentle boil over medium heat, stirring constantly. Boil for 60 seconds, then slowly add a bit of the hot mixture to 2 egg yolks, whisking continuously. Return the tempered yolks to the saucepan and simmer until slightly thickened. Remove from heat, stir in vanilla, and refrigerate covered until chilled.
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Prepare the pastry: In a saucepan, bring shortening and water to a boil. Mix 1 cup flour and a pinch of salt, then add it all at once to the boiling mixture. Stir vigorously until a ball forms. Remove from heat, and slowly stir in eggs one at a time. Drop spoonfuls onto a baking sheet or pipe into desired shapes.
  • First, bake in a preheated oven for 10 minutes, then lower the heat to 400 degrees F (200 degrees C) and bake for an additional 25 minutes or until golden. Allow to cool completely, then split, fill with custard, and top with the remaining half.
