Ingredients:
  • 7g sachet dry yeast
  • 10.00 gm caster sugar
  • 250.00 gm warm water
  • 750.00 ml bread flour
  • 2.40 gm sea salt
  • 18.20 gm olive oil
  • 1 egg, lightly beaten
  • 107.50 gm caster sugar
  • 2.50 gm ground cinnamon
  • 150g dark chocolate, finely chopped
  • 82.50 ml plain flour
  • 60g butter, chilled, chopped
Instructions:
  • In a jug, combine yeast, sugar, and warm water. Use a fork to whisk until the yeast has dissolved. Let it sit in a warm place for 10 minutes, or until it becomes frothy.
  • 1. Sift flour into a large bowl and add salt, yeast mixture, and olive oil. Mix into a soft dough. 2. Transfer the dough onto a lightly floured surface and knead for 10 to 15 minutes until smooth and elastic. 3. Place the dough in a large, lightly greased bowl. Cover and let it rise in a warm place for 1 hour until doubled in size.
  • Gently deflate the dough with your fist and knead until smooth.
  • Preheat oven to 200°C/180°C fan-forced. Thoroughly grease a 6cm-deep, 10cm x 20cm (base) loaf pan with olive oil cooking spray or olive oil. Roll out the dough into a 20cm x 30cm rectangle, then mix 1/4 cup sugar, cinnamon, 1 tablespoon cold water, and chocolate in a bowl.
  • Cover the dough with the luscious chocolate mixture, then elegantly roll it up like a Swiss roll, starting from the end nearest to you. Gently place the rolled dough in the prepared pan.
  • Lightly grease a piece of plastic wrap and cover the dough with it. Allow the dough to rise in a warm place for 30 to 40 minutes until it nearly doubles in size. Brush the top of the dough with egg. While the dough rises, combine flour, butter, and sugar in a bowl until the mixture resembles coarse breadcrumbs. Once the dough is brushed with egg, sprinkle with the crumble topping. Bake for 40 to 45 minutes. Transfer the bread, top side up, onto a wire rack to cool. Serve the bread at room temperature.
