Indulge in rich chocolate goodness with the added bonus of whole wheat nutrition in a delicious muffin.
Ingredients:
  • 1 cup buttermilk
  • 1/2 cup butter or margarine, melted
  • 1 egg
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup Gold Medal™ whole wheat flour
  • 3/4 cup packed brown sugar
  • 1/2 cup unsweetened baking cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 cup miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 375°F and line 12 regular-size muffin cups with paper baking cups. In a medium bowl, combine buttermilk, butter, and egg until well blended. Add flours, brown sugar, cocoa, baking soda, vanilla, and salt, stirring just until moistened. Gently fold in the chocolate chips.
  • Spoon batter into muffin cups, distributing it evenly.
  • Bake for 15-20 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes, then remove from the pan. Serve warm or at room temperature.
