Irresistible chocolate cupcakes with creamy ganache frosting.
Ingredients:
  • 3 eggs
  • 2 cups Gold Medal™ organic all-purpose flour
  • 2/3 cup unsweetened baking cocoa
  • 1 1/4 teaspoons baking soda
  • 1 1/4 teaspoons baking powder
  • 2/3 cup butter, softened
  • 1 1/3 cups packed brown sugar
  • 1 1/2 teaspoons vanilla
  • 1 1/3 cups buttermilk
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup heavy whipping cream
  • 1 package (4 oz) white chocolate baking bar
Instructions:
  • Allow the eggs to come to room temperature for 30 minutes. While waiting, line 24 regular-size muffin cups with paper baking cups. In a medium bowl, combine flour, cocoa, baking soda, and baking powder.
  • Preheat oven to 350°F. In a large bowl, use an electric mixer to blend softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla. Alternate adding the flour mixture and buttermilk on low speed, mixing just until smooth. Scrape the sides of the bowl as needed.
  • Evenly distribute the batter into muffin cups, filling each about two-thirds full. Bake for 14 to 17 minutes or until a toothpick inserted in the center comes out clean. Transfer cupcakes from the pan to a cooling rack and let them cool completely, around 30 minutes.
  • Microwave chocolate chips and cream in a small microwavable bowl on High for 45 to 60 seconds. Stir, then continue microwaving in 15-second intervals until smooth. Dip each cupcake upside down into the ganache, twisting slightly as you lift for a smooth finish.
  • Create elegant white chocolate curls by gliding a swivel-bladed vegetable peeler along the edge of a white chocolate bar in long, thin strokes. Garnish each cupcake with approximately 2 teaspoons of white chocolate curls, delicately lifting them with a toothpick. Allow them to set at room temperature, typically within 2 hours. Store the cupcakes at room temperature until serving.
