Indulgent two-bite chocolate mini-cupcakes with vibrant strawberry-flavored white chocolate frosting. A delicious twist on a classic combo!
Ingredients:
  • 2 cups all-purpose flour
  • 0.25 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 cup unsweetened cocoa powder
  • 5 tablespoons unsweetened cocoa powder
  • 1 (0.13 ounce) package unsweetened strawberry-flavored drink mix
  • 5 tablespoons butter
  • 2.5 cups white sugar
  • 4 eggs
  • 2.5 teaspoons vanilla extract, or to taste
  • 1.75 cups milk
  • 0.25 cup heavy cream
  • 2 cups heavy cream
  • 2 (0.13 ounce) packages unsweetened strawberry-flavored drink mix
  • 36 ounces white chocolate, chopped
Instructions:
  • Preheat the oven to 300 degrees F (150 degrees C). Line four 24-cup mini cupcake pans with paper liners. In a mixing bowl, sift together the flour, baking soda, baking powder, cocoa powder, strawberry drink mix, and salt.
  • In a separate bowl, cream together butter and white sugar with an electric mixer until fluffy. Add eggs one at a time, fully incorporating each before adding the next. Mix in vanilla extract. Alternate adding the flour-cocoa mixture with milk in 4 parts. Reduce speed, incorporate cream, and fill cupcake cups 1/2 to 3/4 full.
  • Bake the cupcakes in the preheated oven for 10 to 15 minutes until a toothpick inserted into the center comes out clean. Then, transfer them to cooling racks to cool.
  • In a saucepan over medium-high heat, heat 2 cups of cream until almost boiling. Add 2 packets of strawberry drink mix and stir until dissolved. Mix in the white chocolate until smooth and shiny. Let the ganache cool to around 95 degrees F/35 degrees C. Use the ganache to frost your cupcakes.
