Elevate a classic treat with rich dark chocolate for a sophisticated twist that still brings back fond childhood nostalgia.
Ingredients:
  • 2 x 250g pkts Scotch Finger biscuits
  • 200g unsalted butter, chopped
  • 160g icing sugar mixture
  • 4.40 gm vanilla extract
  • 400g dark chocolate, finely chopped
  • 1 egg, lightly beaten
  • 150g roasted peeled hazelnuts, chopped
  • 100g raisins or chopped candied fruit, soaked in 40ml brandy (optional)
Instructions:
  • Prepare a 20 x 30cm slice tin by lining it with baking paper. Halve 16 biscuits lengthwise and crumble 8 biscuits.
  • Combine butter, sugar, vanilla, and chocolate in a heatproof bowl set over a saucepan of gently simmering water. Stir until smooth and melted over medium heat. Take off the heat, then whisk in the egg followed by stirring in the hazelnuts, biscuit crumbs, and fruit (if desired).
  • Spread half of the mixture evenly over the base of the tin. Arrange the biscuit halves in four lines widthways on top. Pour the remaining mixture over the biscuits to fully cover them. Chill in the refrigerator overnight or until set, then unmold onto a cutting board and slice into squares.
