Quick and easy microwave chocolate hedgehog slices - a beloved family treat.
Ingredients:
  • 200g plain shortbread biscuits, broken into 2cm pieces
  • 50g (1/2 cup) walnuts, coarsely chopped
  • 35g (1/4 cup) currants
  • 6 dried figs, chopped
  • 250g dark chocolate, broken into pieces
  • 75g unsalted butter or margarine
  • 100g (1/4 cup) honey
  • Cocoa powder, to dust
Instructions:
  • Prepare a 20cm square cake pan by lining the base with non-stick baking paper.
  • In a large bowl, mix shortbread pieces, walnuts, currants, and figs. Melt chocolate, butter, and honey together until smooth. Pour chocolate mixture over the dry ingredients and gently stir to combine. Transfer the mixture into a cake pan, smooth the top, and chill for 2 hours until set. Cut into diamonds, dust with cocoa powder, and store in the fridge for up to 2 weeks in an airtight container.
