Indulge in the irresistible allure of decadent molten chocolate cake.
Ingredients:
  • 8 tablespoons (113g) unsalted butter, plus more for greasing the ramekins
  • 1 cup (6 ounces) semi-sweet chocolate chips
  • 1/4 cup (50g) sugar
  • 2 large eggs, at room temperature
  • 2 large egg yolks, at room temperature
  • 1/4 teaspoon salt
  • 3 tablespoons (29g) all-purpose flour
  • Optional toppings
  • Vanilla ice cream
  • Powdered sugar
  • Cocoa powder
  • Fresh berries
  • Chopped nuts
  • Whipped cream
  • Caramel sauce
Instructions:
  • Preheat the oven to 450°F, then lightly grease the inside of four 6-ounce ramekins with butter using your hands.
  • Create a double boiler by heating water in a medium pot until it simmers. Place a heat-proof bowl on top so it doesn’t touch the water. Combine chocolate chips and butter in the bowl, stirring until smooth. Let it cool for 5 to 10 minutes before using.
  • Mix together the sugar, eggs, egg yolks, vanilla, and salt in a medium bowl. Once the chocolate mixture has cooled down, add it to the egg mixture and stir until combined.
  • Incorporate the flour: Mix in the flour until just blended. If the batter becomes thick, switch to a rubber spatula if necessary.
  • Once the batter is evenly divided into the prepared ramekins, place them on a baking sheet and bake for 11 to 12 minutes until the edges are firm but the centers are still soft. To check if they are ready, gently poke the center of a lava cake with a finger - it should be jiggly, not fully set. If it is still liquidy, bake for an additional 1 to 2 minutes.
  • Let the lava cakes cool for 3 minutes. To invert, cover a plate with a ramekin, flip it carefully, then lift to unmold the cake. Enjoy warm with toppings such as vanilla ice cream, powdered sugar, or fresh berries.
