Decadent chocolate lava cake with coconut and almond flavors, inspired by Almond Joy®, ideal for a romantic dessert after dinner for two.
Ingredients:
  • 1.5 ounces dark chocolate, chopped
  • 1.5 ounces milk chocolate, chopped
  • 1 ounce almond paste, cut into small cubes
  • 2 tablespoons butter, cut into small cubes
  • 2 tablespoons white sugar
  • 1 egg, at room temperature
  • 1 egg yolk, at room temperature
  • 1 tablespoon all-purpose flour
  • 4 teaspoons coconut flakes
  • 1 teaspoon powdered sugar, or to taste
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C). Lightly grease and flour two 4-ounce ramekins, shaking out any extra flour.
  • In a microwave-safe bowl, combine dark chocolate, milk chocolate, almond paste, and butter. Microwave in 20-second intervals until the butter is melted and the mixture is hot, for about 1 to 1 1/2 minutes total. Let it sit for an extra minute for the chocolate to continue melting. Whisk until smooth with a slight grainy texture from the almond paste.
  • In a small bowl, use an electric mixer to beat sugar, egg, and egg yolk until it turns a very light lemon yellow color and has doubled or tripled in volume. Fold in cooled melted chocolate until well mixed, then stir in the flour. Divide the batter among the ramekins and sprinkle coconut flakes on top.
  • Place in the preheated oven until the edges are set but the centers remain slightly gooey, for about 7 to 8 minutes. Let them sit for one minute, then gently flip the ramekins onto dessert plates and sprinkle with powdered sugar. Enjoy right away.
