Decadent chocolate lava cake – a surefire hit with guests.
Ingredients:
  • 50g butter, softened
  • 8.80 gm vanilla extract
  • 128.75 gm milk
  • 187.50 ml plain flour
  • 4.00 gm baking powder
  • 10.00 gm Cocoa Powder
  • 100g dark chocolate, melted
  • Cocoa, to serve
  • Vanilla ice-cream, to serve
  • 750.00 ml fresh raspberries or frozen raspberries
  • 37.50 gm icing sugar mixture, sifted
  • 40.00 ml orange liqueur
Instructions:
  • Heat your oven to 180C/160C fan-forced and prepare a 6cm-deep, 20cm round springform pan by greasing it and lining the base and sides with baking paper.
  • With an electric mixer, whip together butter, sugar, vanilla, and 1 tablespoon of milk until fluffy. Mix in eggs one at a time until incorporated. Add flour, baking powder, almond meal, cocoa, and remaining milk. Beat until just mixed. Stir in melted chocolate. Pour batter into the prepared pan.
  • Bake for 30 to 35 minutes until the top of the cake is firm with a slight wobble in the center. Let cool in the pan for 30 minutes.
  • Prepare the Raspberry sauce by crushing raspberries in a bowl. Transfer to a saucepan over medium-high heat. Stir in icing sugar until well combined. Bring to a boil and cook while stirring constantly for 2 minutes until slightly thickened. Strain the sauce and mix in the liqueur.
  • Gently move the cake to a plate (note that the base will be soft). Sprinkle generously with cocoa powder. Enjoy with a side of vanilla ice cream and raspberry sauce.
