Avocado and chocolate oat breakfast cookies for a protein-packed morning boost.
Ingredients:
  • 0.5 cup CARNATION BREAKFAST ESSENTIALS® Rich Milk Chocolate Powdered Drink Mix
  • cooking spray
  • 2 ripe avocados, mashed
  • 0.5 cup honey
  • 1 cup peanut butter
  • 2 eggs
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 0.5 cup miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C). Cover a baking sheet with aluminum foil and give it a light spray of cooking oil.
  • Combine ripe avocados with honey in a blender until smooth and creamy, ensuring a lump-free mixture.
  • Combine creamy peanut butter, fresh eggs, rich cocoa powder, and flavorful drink mix in the blender. Blend until velvety smooth. Mix in luscious vanilla extract. Scrape the sides and blend until all the powder is fully incorporated.
  • Transfer the batter into a spacious bowl, then fold in the chocolate chips until evenly mixed. Using a scoop, dollop spoonfuls of the batter onto a baking sheet. Gently press down on each scoop to form a cookie shape.
  • Bake for 12 minutes until the center is firm. Let cool on the baking sheet for 3 to 5 minutes, then transfer to a rack. Refrigerate the cooled cookies for storage.
