Indulgent and decadent chocolate cake that's simple to make and absolutely irresistible.
Ingredients:
  • 100 g butter softened, plus extra for greasing
  • 2 tablespoons cocoa powder
  • 100 g caster sugar
  • 1 free-range egg
  • 100 g self-raising flour
  • ½ teaspoon baking powder
  • ½ x 425g tin of black cherries
  • 2 tablespoons hazelnuts
  • 150 ml single cream
  • 75 g good-quality dark chocolate (70% cocoa solids)
  • 1 splash of brandy, rum, Amaretto or Baileys
Instructions:
  • 1. Preheat your oven to 180°C/350°F/gas 4 and grease a small ovenproof dish (23-25cm) with butter. 2. Mix cocoa powder with a few tablespoons of boiling water until smooth. 3. In a separate bowl or using a food mixer, beat butter and sugar until fluffy, then add cocoa mixture, egg, flour, and baking powder. Mix thoroughly and pour into the prepared dish. 4. Drain cherries, chop hazelnuts, and sprinkle both on top of the cake batter. 5. Bake for about 25 minutes. 6. While the cake is baking, make the chocolate sauce. In a small pan, bring butter and cream to a boil. Remove from heat, add chocolate, let it sit for 5 minutes to melt, then add alcohol and stir until smooth. 7. Check the cake by giving it a slight jiggle; if it's set, it's done. If not, bake a bit longer. 8. Once cooked, pour warm chocolate sauce over the cake. 9. Serve straight from the dish or portion onto plates with vanilla ice cream or double cream. 10. Enjoy!
